{FAMILY} You Can’t Handle The Tooth!

Fact: teething bites (pun very much intended).

I’m on my third tooth-bearing child, and let me tell you, it doesn’t get any easier. No matter how much practice you get, those baby chiclets will sneak up on you, and hit you like a slap in the face. One minute your baby is sleeping well and melting your heart with sweet little smiles and giggles, and the next, the pterodactyl from within unleashes its unruly wails as those tiny little white nuggets push their way through to the surface of your poor baby’s gums.

Sleepless nights, soaked-through tops, and the biting (oh the biting!). Unfortunately, teething is inevitable. We have to let nature take its course – it’s just not optional. What is optional though, is how we deal with the disastrous childhood milestone.

As parents we have two choices: we can grin and bear it – suffer through the raw pain of parenting a teething toddler for the months (sometimes years!) of agony – or, we can numb the pain for our poor little biters by providing them with the right supplies they need to dull the distress.

{TRAVEL} Springs RV Resort (Harrison Hot Springs)

Our family loves to explore local travel destinations, and Harrison Hot Springs has always been at the top of our list of family favourite getaways. And while we’ve always vacationed at the same resort in years past, this year we were invited to try something a little different – a weekend stay at Springs RV Resort.

I had never stayed in an RV, and had preconceived notions of what an RV park would have to offer as a travel destination, but I kept an open mind and was excited to explore my favourite BC spot from a new perspective.

When we arrived at the resort, I was in awe. As we drove into the gates, I realized that this wasn’t your average trailer park, this was a luxury retreat – complete with a plethora of kid-friendly amenities and family activities.

When we pulled up to our site, I was impressed by the cleanliness of the grounds – each site was well cared for and carefully landscaped, and each featured its own unique, custom-built deck made of rough-cut timber, and cedar shake roofed gazebos with outdoor kitchens. Each site also featured a shabin (a shed-cabin!) with built-in bunk beds for the kids. The shabin was definitely a highlight for my little ones who spent hours playing in their own little fortress.

While we had originally planned on spending most of our weekend enjoying the Sasquatch Festival in the lakeside village of Harrison Hot Springs, we found that there was just so much to do in our own little RV community, so we opted for outdoor activities that were a bit closer to home base.

Steps from our door were some lovely forested trails, perfect for a family stroll on a hot Summer’s day.

With record-high temperatures, we also loved splashing in the beautiful pools.

And after dinner, our kids loved playing on the treed playground, featuring an antique carousel (originally from The Commodore Ballroom in Vancouver, a true heritage piece).

We quickly learned that there was so much more to do at Springs RV Resort than just glamping in an RV – it’s no wonder they’ve received recognition as one of the top RV resorts in North America!

There were so many great things to love about this resort, including:

{FAMILY} Why I Quit Using Cloth Diapers

I successfully used cloth diapers for baby #3, and I’m so proud of myself for sticking with it for as long as I did (almost a year). I saved a lot of money (especially since the cloth diapers I was using had a great ROI – I was able to sell them for a great profit), and I felt good about my small contribution to the well-being of our planet. But all good things must come to an end. My baby grew out of the stock of cloth diapers that I had, and I had to make a decision: reinvest in the next size up, or transition back to disposable diapers.

With my little one now on solid foods and soiling her diapers much less frequently, and a busy schedule of rushing around with my two older children, convenience won and I decided to transition away from cloth diapering. While I enjoyed the experience, it was time to move on.

While I was happy with my decision, I felt tinges of guilt as I tossed the disposables into the trash. I was aware of the environmental impacts of my decision and feeling guilty for turning my back on my goal to be a more environmentally-friendly household.

When I received a package in the mail filled with cleaning products and diaper supplies from an earth-friendly brand called Seventh Generation (a brand that I had worked with a few years ago), I was excited to try out their diapers again! {RECIPE} Our Favourite Meatloaf

I’m not sure why I don’t make meatloaf more often. It’s so simple to make, and my kids love it! It’s like a giant meatball packed with veggies and protein, topped with sweet tomato sauce – perfect for picky palates.

This was quite possibly the easiest dinner I have ever made for my family. You just toss the ingredients into the bowl, mix them up, place the mixture in a loaf pan, cook it, and serve it up! I chose to serve this version of meatloaf with roasted potatoes and baby carrots, and a delicious pear and gorgonzola salad, but this meal would also work well with rice and broccoli, or just about any combination of carb and veggie.

Ingredients:

Directions:

  • Preheat oven to 325°F (160°C). Combine beef, 1/2 can of soup, onion, breadcrumbs, parmesan, eggs, black pepper, and garlic.
  •  Transfer to a nonstick 9×5 inch (2 L) loaf pan. Spread remaining soup over top. Bake for 60 minutes or until instant read thermometer registers 165°F (74°C) when inserted into the center of the meatloaf.
  • Let stand for 5 minutes before serving.

Bee’s Take:

  • Try adding diced carrots and celery to sneak in some added veggies.
  • I found the sauce slid off the top once the meatloaf had fully cooked, try saving 1/4 of the sauce and adding it for the last few minutes of cooking time.
  • Use extra lean ground beef to cut down on fat.

{RECIPE} Chicken And Broccoli Alfredo

In a house full of picky eaters, it’s challenging to find dinners that satisfy the taste buds of my little babes. And while their palates have varying preferences, there are two ingredients that always seem to appease the whole gang – chicken, and broccoli. A meat, and a veggie. It could be worse, right?

Before I became a Campbell’s Ambassador, my roster of recipes had included only one go-to chicken and broccoli dish, but I can happily say that I now have another delicious dish to add to my list – Chicken And Broccoli Alfredo.

This recipe is surprisingly easier to make than my old standby, and the added flavours of sundried tomatoes and basil give it a twist – differentiating this dish from the list of other chicken and broccoli recipes that I’ve tried in recent months.

Recipe

Ingredients:

10 oz (284 g) fettuccini
3 cups (750 mL) broccoli florets
2 tbsp (30 mL) butter
4 (750 g) boneless, skinless chicken breasts, cubed
1/4 tsp (1 mL) salt and ground black pepper (each)
3 cloves garlic, minced
1 can (284 mL) CAMPBELL’S® Condensed Low Fat Cream of Chicken Soup
1/2 cup (125 mL) 1% milk
1/3 cup (80 mL) sundried tomatoes, chopped
2 tbsp (30 mL) fresh basil, chopped
1/4 cup (60 mL) parmesan cheese, grated

Recipe

Directions:

1) Cook fettuccini according to package directions. Add the broccoli during the last 2 minutes of cooking. Drain and set aside.

2) Meanwhile, heat butter in a large skillet over medium-high heat. Season chicken with salt and pepper. Cook, stirring often, for 5 minutes or until golden brown. Add garlic and cook for 1 minute or until fragrant.

3) Add soup, milk and fettuccini with broccoli. Cook, stirring often, until heated through. Stir in sundried tomatoes and basil. Serve with parmesan cheese.

{FAMILY} Creativ Music Centre: Piano Lessons For Kids

I have always had a love for music. Growing up, musical lessons were always a part of my life – from violin lessons, to singing lessons, to piano lessons – which I stuck with for almost a decade. Listening to music was an inherent part of my everyday life – I awoke each morning to a music-blasting alarm clock, I listened to music in my headphones as I walked to school, and as soon as I arrived home, my music was playing as I did my homework and played with my toys. At night, I couldn’t fall asleep without some quiet background music to lull me to dreamland.

Now that I’m a parent myself, I not only share my love for music with my children, but I see great value in having them engaged in some sort of musical lessons. I believe that learning how to play a musical instrument teaches children patience, discipline, and coordination, while enhancing their motor skills and boosting their self esteem.

I had been wanting to sign my daughter up for piano lessons for quite some time, but was unsure as to where to send her that would be fun, engaging, and effective. I wanted to find a music school that offered an array of musical options, but that was close to home and affordable. When Creativ Music Centre reached out to me to see if I would be interested in having my daughter try out their lessons, I couldn’t wait for her to get started!

I had heard about Creativ Music Centre from fellow parents, but didn’t realize how expansive their musical offerings would be. Housed in a state-of-the-art facility in North Vancouver, Creativ offers a variety of music-related services including: pop star parties, music lessons (drum, guitar, piano, vocal), and music clubs (acapella, jam sessions, ultimate glee camp). Creativ’s motto is to create Music With Imagination, striving to provide opportunities for people of all ages to experience music – through learning music, recording music, performing music, or just having fun!

After reviewing the options together, my daughter decided that she wanted to try piano lessons, and we signed her up for the Jump Start Package, which includes:

  • 6 weeks of lessons (30 minutes per lesson)
  • 6 weeks of instrument rentals 
  • choice between piano, guitar, vocals, or drum lessons
  • Cost: $149

As we arrived for her first lesson, the first thing that caught our eye was a sign that read “Please Touch The Instruments”. When I read this, I knew that we had come to the right place.

Immediately my daughter weaved through the instrument displays, tapping on drums, fingering piano keys, and strumming guitar strings – all while wearing a huge grin on her face.

When her piano instructor called her name, she hopped into his classroom, eager to get started.

When we returned home from her first lesson, we immediately set up her rental piano so she could show us what she had learned. After only one class, she was already playing a recognizable tune – Twinkle Twinkle Little Star, and oozing with excitement and self confidence, she practiced and practiced.

Her enthusiasm was contagious, and she soon had my husband sitting by her side on the piano bench, eager to mimic the same tune. With her guidance, he mastered the song as well, and they both couldn’t wait to learn more.

After her second lesson, she was learning a second tune, and starting to learn how to play a song using both hands.  I was surprised at how quickly she was progressing, and she was loving the variety of the music that she was learning.

By the end of week 4, she was reading music – able to identify the notes on paper and on the keyboard.

We’ve just finished our sixth week and my daughter is now familiar with the basics of music. She can read the notes, and can play 4 songs (some with both hands). I asked her what she thought of her piano lessons and here’s what she had to say in her own words:

The place where they teach me piano is really cool. I like that I can touch all of the instruments, and my teacher is really fun and nice. Next time, I hope I can also try singing lessons! – Emma, 7 years old

Recipe: Cheesy Beef Skillet Dinner

Despite the repetitive menu requests from my kids – we can’t have quesadillas for dinner every day, so I’ve tried another cheesy, delicious, Cook With Campbell’s recipe that incorporates some of my children’s favourite ingredients: meat, cheese, and macaroni noodles -> the Cheesy Beef Skillet Dinner.

As all Campbell’s recipes, this one was super easy to make – requiring only one pot (for the noodles), and one pan/skillet (for everything else). This was the perfect meal for a busy evening packed with extracurricular activities (post-soccer game dinner perfection) – and super tasty too!

Cook With Campbell

Ingredients: 

1 tbsp (15 mL) canola oil
1 lb (454 g) lean ground beef
1 tbsp (15 mL) steak spice
1 onion, chopped
1 green pepper, chopped
2 cups (500 mL) button mushrooms, sliced
1 can (796 mL) tomatoes, diced
1 can (284 mL) CAMPBELL’S® Low Fat Cream of Mushroom Soup
1 tbsp (15 mL) Dijon mustard
2 cups (500 mL) macaroni, cooked to al dente and drained
3 cups (750 mL) aged Cheddar cheese, shredded and divided
1/4 cup (60 mL) green onion, chopped

Directions:

1) Heat oil in a large, nonstick skillet set over medium-high heat. Crumble in ground beef; season with steak spice. Cook, breaking up into small pieces, for 5 to 7 minutes or until browned. Add onion, green pepper and mushrooms. Cook, stirring occasionally, for 5 to 7 minutes or until vegetables are tender-crisp.

2) Stir in tomatoes, soup and mustard. Reduce heat to medium-low. Simmer for 5 minutes or until slightly thickened. Stir in cooked macaroni and 1 cup (250 mL) cheese until well combined.

3) Sprinkle the top with remaining cheese and green onion. Cover and remove from heat. Let stand for 5 minutes or until cheese is melted.

Bee’s Take:

1) I like my cheese a little brown and crispy. If you do too, I would suggest popping the finished skillet meal into the oven for a few minutes under the broiler.

2) For picky eaters who aren’t crazy about mushrooms, I think this dinner would be equally as delicious using Campbell’s Cream of Broccoli Soup, and perhaps replacing the mushrooms with fresh broccoli.

3) The leftovers made the most delicious lunch the next day, perfect for a work-from-home mom like me. I may have added some extra melted cheese on top.

4) Don’t forget to cook the macaroni noodles first so they’re all ready to add at the end!
